Jackfruit lasts a long time in the refrigerator. After a while, juice will drain out into the bottom of the container. Don’t toss it out! Or you could just juice the fruit, having first removed the seeds.

We love the syrup on anything sweet. Try it over vanilla ice cream or on pancakes.

Makes 1/4 to 1/2 cup.

Ingredients

1 cup jackfruit juice

Directions

Place juice in a small saucepan and turn it up to medium-high.

Allow juice to boil, with supervision, until it has reduced to half or less, as desired.

Serve warm.

Store in refrigerator.
