Sweet Potato greens vary in flavor and texture. Boniato leaves are some of the best-tasting, but all are edible and taste good cooked.

Makes 4 servings.

Ingredients

2 quarts sweet potato leaves, chopped

1 onion, chopped

1 Tbs bacon grease or coconut oil

1 Tbs apple cider vinegar

1 cup chicken stock or bone broth

salt and pepper to taste

cinnamon to taste, optional

Directions

In a large pot, heat grease or oil. Add onion and sauté until soft, about 5 minutes.

Add sweet potato leaves and stir well to coat with the grease. Add broth and vinegar and stir well to mix.

Put the lid on, then turn down the heat to medium-low. Wait 10 minutes.

Stir well and test for texture. Sweet potato leaves have textures ranging from smooth to rough. If you want them softer, put the lid back on and cook 5 minutes more.

Season to taste with salt and pepper and cinnamon.
