This nutritious soup is always nostalgic for me because I grew up eating it. And it’s especially good for when you have a cold. Apparently, there are specific things in chicken soup that help you feel better.

If you like matzo ball soup, this is a great base recipe to add your matzo balls to. Otherwise, egg noodles are a great addition. Read the package for either of these to know when to add them during the cooking process so they are the perfect texture when it’s done.

Makes 2 quarts

Ingredients

1 quart chicken stock or bone broth

meat from making chicken broth, simmered half an hour to 1 hour (see recipe)

1 onion, chopped

3 stalks celery, chopped

3 large carrots, chopped

Directions

Put the chicken broth in a large pot with a lid. As soon it can be handled, take as much of the meat off the bones as you can and add it to the pot. Add the chopped vegetables and bring to a boil. Stir, turn heat down to medium-low, cover and simmer half an hour.

Serve with a garnish of sour cream and/or finely chopped green onion.

Chicken stock is useful in many of the same ways bone broth is, but it’s nice to have more than one option to reach for. Chicken stock is also very healthy, if not quite as nutritious as bone broth. Making your own will save money and add flavor to so many dishes! How do you like it?
